Clara and Paolo Cavalli, owners of Cavalli Pizza, are both first-generation Americans who inherited a couple of unusual characteristics from their Italian parents—a passion for pizza, and an obsessive perfectionism — and brought all that baggage to the Dallas area a few years ago. That’s good news for area therapists – and true aficionados of pizza.
When they moved to Dallas, the Cavallis just couldn’t find a pizza that was up to their standards, so they
did the only thing they could—they opened a place where they could pursue their relentless quest for the perfect pizza. Cavalli Pizza is a real family business. In fact, when you visit, you’re likely to see Paolo or Clara (or even Paolo’s mom) behind the cash register.
The Cavallis found their perfect pizza. And you can, too – at Cavalli Pizza.
Verace Pizza Napoletana (VPN) is what Neapolitans quite literally call “the perfect pizza.” Fearful that the traditional pizza would soon be lost to cheaper ingredients and faster methods, a group of pizza makers in Naples formed an association to preserve the authentic Neapolitan pizza. And so the Associazione Verace Pizza Napoletana was born, and with the support of the Italian government, a long list of exacting specifications was created to define this perfect pizza. Now, a rigorous certification process is required by any restaurant wishing to serve authentic Neapolitan pizza. Only a handful of establishments in the United States have earned this distinction, and we are proud of the fact that Cavalli Pizza is the first restaurant in the state of Texas to earn this honor.
Ingredients, as well as the entire preparation process, are clearly defined by the Verace Pizza Napoletana Association (VPN). We have undergone a rigorous certification process and must adhere to incredibly strict standards in order to serve you an authentic Vera Pizza Napoletana.
We are committed to the standard of excellence set by this association. And that’s good news for you – it means we’ll bring you the best pizza you’ve ever tasted.
