Clara and Paolo Cavalli, owners of Cavalli Pizza, are both first-generation Americans who inherited a couple of unusual characteristics from their Italian parents—a passion for pizza, and an obsessive perfectionism—and brought all that baggage to the Dallas area a few years ago.
